Product Description

Chinese artichoke is a hardy perennial.  Height approximately 182.  Bright green leaves with pink flower spikes.  Remove flowers to encourage production of tubers.  Tubers can be eaten raw in salads, lightly fried in butter or used in stir fries.  Good replacement for water chestnuts.  Have a delicious nutty flavour and crunch texture.
